Pink Lady Miso Porridge

1 ½ cups rolled oats
¼ cup semolina
3 Pink Lady apples, peeled and coarsely grated
2 tsp Spiral Organic Shiro Miso
2 tbsp brown sugar, plus extra to serve
Bonsoy soymilk, to serve (optional)
Bring 1.25L of water to the boil. Reduce heat to very low then whisk in the semolina. Add oats and stir regularly until oats are soft and have absorbed most of the water.
Remove from the heat, stir through grated apple, miso and sugar. Serve immediately with extra brown sugar and milk, if desired.
