Baked Scallops with Umami Sauce

INGREDIENTS

3 large fresh scallops with shell
1 large thumb size ginger, peeled & sliced very thinly
2 spring onions, sliced diagonally very thinly
3 tbsp Spiral Umami Black Garlic Sauce in Black Sesame Sauce
1 tbsp Spiral Japanese Toasted Sesame Oil
sprig of coriander (optional)
2 cups coarse salt

METHOD

Preheat the oven to 200C. Place the course salt on an oven proof plate and arrange the scallops on the salt.

Cook in the oven for a few minutes until the scallops are half cooked.

Place the ginger and onion on top of the scallops and pour the umami sauce over the scallops. Return to the oven and cook for a further 3-5 minutes until just cooked.
