Instant Ramen Okonomiyaki

INGREDIENTS
1 packet spiral organic ramen shoyu
1/5 cup finely chopped cabbage
2-3 tbs finely chopped spring onion
1 egg
1-2 tbs spiral sesame oil
2 tbs mayonnaise
*shichimi pepper (optional)
METHOD
1. In a small pot of boiling water, cook ramen noodles until tender, about 4-5 minutes,and drain well.
2. In a small bowl, add mayonnaise and 1-2 tsp of soup stock and mix well.Set aside.
3. In a large bowl, add egg and mix well.Add ramen noodle, cabbage, spring onion and 2-3 tsp of soup stock and mix together.
4. Heat sesame oil in a large skillet over medium heat.Add ramen mix and cook for 3-4 min.
5. When the bottom side is nicely browned, flip over.
6. Gently press the okonomiyaki to fix the shape and keep it together. Cook for another 3-4 min.
7. Flip over one last time and cook for 1-2 min.
8. Transfer to a plate.Add mayonnaise mix. Drizzle the okonomiyaki with 1-2 tsp of soup stock. Top with spring onion and Shichimi pepper.
9. Serve hot.
