Spring Organic Soba Salad with Organic Miso Dressing

INGREDIENTS

Spring Organic Soba Salad Ingredients (Serves 2)
1 x Packet of Spiral Organic Soba Noodles
200gm Cherry or Mini Roma Tomatoes
1 x Handful of fresh Coriander (or Parsley if preferred)
25gms Roasted Walnuts
50gms Goats Cheese or Danish Feta
1 x teaspoon Sesame Seeds
Organic Miso Dressing Ingredients (Serves 2)
3 Tablespoons of Spiral Organic Sunflower Oil
1 ½ teaspoons Spiral Organic Brown Rice Vinegar
1 teaspoon Spiral Organic Shiro Miso
¼ teaspoon Spiral Roasted Sesame Oil
½ teaspoon Spiral Organic Shoyu
½ teaspoon Maple Syrup

Bowl of Organic Soba Salad with tomatoes, coriander, feta and walnuts, with an Organic Miso and Shoyu dressing.

METHOD

Cook the Soba noodles as per packet instructions, in 2 litres of boiling water for approximately 4 minutes.

While the noodles are cooking, wash the tomatoes and coriander, then half tomatoes and tear the coriander leaves. Roughly chop the walnuts.
Once noodles are cooked, rinse under cold water and steep in an ice bath. Once cool, allow to rest on paper towel or a bamboo strainer.

In a large mixing bowl, toss together the Soba noodles, tomatoes, coriander and walnuts.

For the dressing, combine all the dressing ingredients together until smooth, adding a dash of extra vinegar if the dressing is too thick.

Add the dressing to the mixing bowl with all the salad ingredients, the gently toss in the crumbled feta and sesame seeds.

Divide into serving bowls, and add extra dressing to taste.
