Wasabi Goma Dare Soba Salad

INGREDIENTS

Spiral 1 tbsp Organic Brown Rice Vinegar
Spiral 2 tbsp Organic Tamari
Spiral Crispy Nori Krinkles
Spiral 1 tsp Wasabi Paste
Spiral 3 tbsp Organic Unhulled Tahini
Spiral 1 tbsp Organic Maple Syrup
1 x Cucumber
1 x Tomato
Spiral Organic Soba Noodles

METHOD

In medium sized bowl, stir together tahini, tamari, brown rice vinegar and maple syrup until smooth and creamy. Add one tbsp of water to thin out the dressing.
Add 1 tsp of wasabi paste
In a pot of boiling water, cook one sleeve of Spiral Soba Noodles as per packet instructions
While the noodles thinly slice both the tomato and cucumber.
Once noodles are cooked, drain and rinse under cold water, then place on a serving platter.
Arrange the sliced cucumber and tomatoes on top of the soba noodles, with a sprinkling of Nori Krinkles.
Drizzle with the wasabi dressing and enjoy!
