Poke Mixture
◘ 1Tbsp Spiral Plum Vinegar
◘ 1Tbsp Spiral Arame
◘ 1/8 red onion, sliced thinly
◘ 1-2Tbsp spring onion, chopped
◘ 150-200g chopped fresh raw tuna
◘ 1-2Tbsp Spiral Genuine Tamari
◘ 1Tbsp Spiral Japanese Sesame Oil
◘ ½-1 tsp Shichimi pepper
◘ 1 tsp white sesame seeds
◘ 1Tbsp Spiral Nori Krinkles◘ freshly cooked rice to serve
◘ 1/6 cucumber, sliced thinly
◘ ½ avocado, sliced thinly
◘ 3-4 radish, sliced thinlyMETHOD

1. In a small bowl, mix radish and plum vinegar together. Set aside.2. In another small bowl, soak Arame in water for 3-5 minutes and drain.3. In a large bowl, mix tuna, spring onion, red onion, tamari, sesame oil, shichimi pepper together.4. In a serving bowl, add rice and pile poke mixture high in the center. Top with avocado, cucumber and pickled radish.5. ◘ 5-6 chicken drumsticks
◘ 1 tsp Spiral Organic Minced Ginger
◘ 1 tsp Spiral Organic Minced Garlic
◘ 1Tbsp Spiral Genuine Tamari
◘ 1Tbsp Spiral Mirin
◘ 30g Spiral Organic Kuzu
◘ 100ml Spiral Organic Extra Virgin Olive OilMETHOD

1. Cut off the bottom part of the chicken and remove any sinews with scissors.2. Turn them inside out so the bone is on the outside.3. Put the chicken, minced ginger, garlic, tamari and mirin in a bowl and mix well.4. Cover and marinate for at least 3 hours in the fridge.5. Dredge chicken in kuzu.6. Deep fry in hot oil 180C for 4-5 minutes.7.
