Baked Sweet Potato

Garnish: sesame seeds
Bring a large pot of water to the boil. Add sweet potato and cook until tender, (approximately 15 to 20 minutes). Drain well and mash the sweet potato. Add maple syrup and Bonsoy, continue to mash until smooth and creamy. Preheat the oven to 190°C and line a baking tray with baking paper. Gently shape mixture into 3cm balls. Drizzle maple syrup and sesame seeds on top.
Bake in the oven for 20-30 minutes, or until golden, serve warm and enjoy!
