Breakfast Quinoa with Stewed Fruit

  • 1 cup Eden Quinoa
  • 1 cup Apple juice
  • 1 cup water
  • 3 tbsp Eden Pumpkin seeds
  • 200g Organic Natural Yoghurt
  • 1 cup stewed Apple
  • Cinnamon to sprinkle


In a medium sauce pan add the quinoa, water and apple juice. Bring to the boil, reduce the heat, cover and let simmer for 15 minutes. Turn the heat off and let rest for 5-10 minutes. Fluff the quinoa with a fork and place in a large bowl. Add the pumpkin seeds, blueberries and stir through.

Serve in a bowl with some fresh fruit or any stewed fruits with a dolop of yoghurt and a sprinkle of cinnamon. Enjoy
