Coconut Butter Raw Truffles

85g coconut butter
1/2 tsp vanilla bean paste
35g raw cacao powder
65g Spiral organic agave nectar
1/3 cup coconut chips
Melt the coconut butter gently over a bowl of hot water (continue to stir until melted). Add vanilla bean paste, raw cacao powder, and agave nectar. Mix well until combined.
Remove the bowl from the heat. In a food processor, add the coconut chips and process for 20-30 seconds.
Shape the coconut butter mixture into 2.5cm balls. Roll the ball into the fine desiccated coconut.
Store in refrigerator until set and ready to use.
