Creamy Shiitake Mushroom Noodles

3 x packets Spiral Shiitake Mushroom Ramen
1 tbsp Spiral Organic Olive oil
4 rashers of middle cut bacon, rind removed, finely chopped
200g button mushrooms, sliced
250g Cream Cheese
4 green onions/shallots, white section only, finely chopped
2 tbsp dried parmesan
Cracked black pepper, to taste
Prepare ramen noodles according to packet instructions. Drain liquid, reserving ¼ cup for later.
Heat oil in a medium sized frypan over medium-high heat. Add bacon and fry for 2 mins, then and mushrooms and fry a further 2 mins. Turn heat down to low then add the cream cheese, spring onion, parmesan and black pepper then add in cooking liquid from ramen and allow to simmer for 2-3 mins.
Remove from heat, stir through ramen noodles to coat then serve immediately with extra cracked black pepper.
