Genmai Gohei Mochi

INGREDIENTS
1/3 cup Unsalted Cashews
2 tbs Spiral Mirin
1 tbs Spiral Organic Shiro Miso
1/2 cup cooked brown rice
METHOD
1.In a suribachi, grind cashews into smaller pieces.
2. Add Spiral Mirin and Spiral Organic Shiro Miso and mix until a paste forms. Set aside.
3. In a suribachi, add brown rice and grind into a sticky paste.
4. Wet your hands and make them into balls.
5. Tightly wrap the rice around a bamboo stick into a flat oval.
6. Preheat oven to 180C.
7. Coat one side of each mochi with a generous amount of the cashew paste.
8. Bake for 12-15 minutes until the cashew paste becomes crispy and golden brown.
9. Serve immediately.
