Sweet Soup

INGREDIENTS
Coconut Granita
1 young coconut, water
1 tbsp sugar syrup, or to taste
200g Spiral Organic Coconut Milk
1 mango, diced
1 grapefruit or pomelo, wedged
1 tin of jackfruit, sliced
1 tin of lychees, chopped
2 tsp nata de coco
1-2 red finger limes
Pinch of salt
METHOD
Combine the coconut water and sugar syrup in a bowl, taste and adjust the sweetness to your preference. Pour into a tray and freeze for 4 hours, use a fork to scrap the granita every few hours.
Place the coconut milk in a large bowl, sweeten with a drizzle of sugar syrup and season with a pinch of salt, set aside.
In your serving glass layer mango, grapefruit, lychees, jackfruit, nata de coco. Pour over the Spiral Food Organic Coconut Milk and top with the coconut granita and finger lime.
