Tofu Patties with Salsa

INGREDIENTS

500g Firm Tofu
2 tbs Spiral Sesame Oil
1 medium Onion, finely diced
1 cup Carrot, grated
1 cup Celery, finely diced
1 tsp mixed Herbs of your choice
2/3 cup Walnuts, chopped
1 cup Brown rice, cooked
3 tbs Spiral organic Tahini, Hulled or Unhulled
2 tbs Spiral Shiro miso
2 tbs Spiral Salt Reduced Tamari
1 tbs Spiral organic Dijon Mustard

METHOD

Preheat oven to 200 degrees C. Line a baking tray with baking paper and a touch of oil. Remove Tofu from its packaging, drain off any liquid and pat dry with paper kichen towl. Heat oil in a pan and saute veggies for about 4-5 minutes until tender. Grate tofu in a large bowl, add sauted veggies, walnuts, rice and mix together. In a seperate bowl mix Tahini, Miso, Tamari and Mustard together, add to the tofu mixture and stir through. Use your hands to form round patties and place on lined baking tray. Sprinkle or use a brush to add a small amount of oil to the top of the patties. Place in the oven for 25 minutes or until firm and golden brown.

Serve with a salad and relish!
