Preheat oven to 170 degrees. Heat oil in a large pan over medium-high heat. Add onions, salsa and black beans. Simmer for 5 minutes then set aside. Cut tortillas into quarters. Arrange three tortilla pieces into muffin cups. Overlap edges and press gently into the muffin cups. Bake at 170? for 15 minutes or until they are evenly browned and crispy. Add 1.5 tbs salsa mixture into tortilla cups. Top with shredded cheese.
Bake 1-2 minutes until the cheese has melted and the edges are golden brown.
