Pickled Daikon Radish
Daikon Radish is known as the “great root” and has long been one of Japan’s most prized vegetables. The finest daikon radish is chosen for Takuan (whole Pickled daikon radish), washed and slowly sun-dried, then pickled with rice bran (NUKA) and sea salt. By drying Takuan under the sun, the Umami or savoriness and nutrition will double.
