It’s definitely starting to feel like summer! Cool down with a scoop of ice cream and top it up with this delicious Houjicha Caramel Sauce by @kozume_yuka.Houjicha translates as “roasted tea” in Japanese. Today we’ll mildly roast our loose leaf Organic Green Tea (Sencha).INGREDIENTS

Houjicha
◘ 30g Spiral Organic Green TeaCaramel Sauce
◘ 2Tbsp ground Houjicha
◘ 80mL Bonsoy Soy Milk
◘ 3-4Tbsp Spiral Organic Maple Syrup
◘ 2Tbsp water
◘ 1 scoop vanilla ice creamMETHOD

Houjicha
1. Preheat clay pot for 30 seconds. Spread the green tea leaves into the pot.
2. Keep roasting on low heat for 8-10 minutes or until the tea leaves have browned, and gives off a roasted aroma.
3. Place the roasted leaves onto a plate to cool.Caramel Sauce
1. Finely grind the Houjicha in a suribachi.
2. In a small bowl, mix the Houjicha powder and soy milk well.
3. Heat water, Houjicha powder and soy milk mix in a small saucepan on low heat. Stir constantly until it thickens and is no longer watery.
4. Serve with vanilla ice cream.

Umeboshi and mayonnaise is another great combo. I simply mixed the umeboshi puree with mayonnaise – that is it. If you only have umeboshi, you can remove the seed and chop the flesh to make a paste. Swipe to check out how I made umeboshi mayo in the second video. I was mumbling a bit in the video, but what I wanted to say was that each mayonnaise tasted different; some are saltier than others. You can adjust the amount of umeboshi puree you use according to your mayonnaise’s saltiness and how strong you want your umeboshi flavour to be.Cabbage ume asazuke
I massaged chopped cabbage with umeboshi vinegar. It is very easy to make and it’s also perfect as a palate cleanser.Consuming umeboshi in the morning is said to be great. Warm yourselves up today with some chawanmushi!Chawanmushi is a delicate and steamy classic Japanese steamed egg custard served in a cup. Usually served as an appetiser, this dish is perfect for cold, gloomy days like this!@kozume_yuka serves up her version using some @originalbonsoy soy milk!Bonsoy ChawanmushiINGREDIENTS (Serves 2)

◘ 180mL Bonsoy Soy Milk
◘ ½-1 tsp salt
◘ 2 tsp Spiral Instant Vegan Dashi Powder
◘ 1 finely chopped mushroom
◘ 1 egg
◘ dill (optional)METHOD

1. Add the soy milk, salt and dashi powder into a small saucepan on medium heat until warm and mix well.2. Place the egg in a large bowl, whisk with chopsticks.3. Pour milk mixture into egg and mix well.4. Place the mushroom into teacups and add salt.4. Strain the egg mixture into two teacups and cover with aluminium foil.5. Place the steaming rack onto the steamer and cover. Once the water starts boiling, reduce to low heat. Gently place the cups inside the steamer.7. Cook for 10-12 minutes until egg is firm.8.
