------------------------------------------2 Tbsp Spiral Organic Extra Virgin Olive Oil
3-4 garlic cloves, crushed and minced
1 onion, chopped
1 medium carrot, chopped
2 stalk celery, chopped
1 medium zucchini, chopped
1/4 cauliflower, cut into small flowerets
2 Tbsp Spiral organic tomato Passata
1 can Spiral organic kidney beans, drained
1.5 L vegetable broth
1 jar Spiral organic Basil and Garlic pasta sauce or 2C of Spiral organic Garlic & Basil Sugo
1C any Casalare pasta (macaroni/quinoa twist / spiral) or Casalare brown rice spaghetti cut into 2cm
1/3C shredded parmesan cheese (optional)
2 Tbsp minced parsley
Salt and pepper to tasteMETHOD
-------------1. In a large pot, add olive oil and garlic, heat it and add onion stir and cook until translucent.
2. Add carrot and celery stir and cook
3. Add zucchini, cauliflower and Spiral organic Tomato passata and stir well and cook.
4. Add Spiral organic Basil and Garlic pasta sauce or organic Garlic & Basil Sugo, chicken / vegetable broth, and heat it, when it comes to boil, reduce the heat and simmer with lid for about 10-15 minutes until the vegetable becomes tender.
Add Spiral organic kidney beans, pasta or spaghetti (cut into 2cm)
5. Simmer again for about 10 minutes or until pasta is cooked. Salt and pepper to taste.
