A Japanese chilled tofu dish best enjoyed in the summer. Make it your own with lavish toppings of your choice, such as grated ginger, dried bonito flakes or julienned cucumber. As simple as it is elegant, try our recipe: ⁠

INGREDIENTS⁠
1 pack of organic silken tofu⁠
1 tbs Spiral Organic Tamari⁠
1 tbs Spiral Japanese Sesame Oil⁠
1-2 tbs Spiral Organic Aosa Furikake⁠
⁠
METHOD⁠
Cut the tofu in half and place on small serving plates.⁠
In a small bowl, combine the tamari and sesame oil.⁠
Drizzle the sauce mixture over the tofu.⁠
Top with some Furikake to your liking.⁠
Enjoy!⁠

Pickled Cucumber Bars⁠
- vegan/gluten-free - ⁠
⁠
INGREDIENTS⁠
---------------⁠
◘ 3-4 cucumbers⁠
◘ 1Tbsp Spiral Organic Umeboshi Puree⁠
◘ 1-2Tbs Spiral Mirin⁠
◘ 1Tbsp Spiral Japanese Sesame Oil⁠
◘ ½-1Tbsp salt⁠
◘ 3-4 chopsticks⁠
◘ pepper to taste⁠
⁠
METHOD⁠
------------⁠
1. On a chopping board, sprinkle salt onto cucumbers and rub well.⁠
2. Cut off the ends of the cucumbers.⁠
3. Insert a skewer or chopstick into the bottom of each cucumber and gently push all the way through to the top.⁠
4. Hold a sharp knife at an angle and slice the cucumber down to the skewer in the opposite direction while turning.⁠
5. Gently fan out each cucumber down the length of the skewer, until you have even gaps between slices. ⁠
6. In a small bowl, combine the umeboshi puree, mirin and sesame oil.⁠
7. Place the cucumbers and umeboshi mix in a freezer or Ziplock bag and squeeze out the air, sealing the bag tightly.⁠
8. Rub the cucumbers well into the mixture. Pickle for 2-3 hours in the fridge.⁠
9. Sprinkle with pepper and serve. Enjoy!⁠

2 Lebanese cucumbers ⁠
½ pack (25g) Spiral Pickled Ginger thinly sliced, and squeezed⁠
¼ pack (25g) Spiral Organic Wakame, soaked in cold water for a few minutes, chopped and squeezed⁠

Dressing⁠
1Tbsp Spiral Japanese Sesame Oil⁠
½ Cup Spiral Organic Sushi Vinegar⁠
2-3Tbsp Spiral Organic Rice Syrup (or 1-2Tbsp Spiral Organic Maple Syrup)⁠

Method⁠
1. Cut the cucumbers lengthwise, remove seeds with a spoon and slice very thinly. ⁠
2. In a small bowl, mix the dressing ingredients. Set aside.⁠
2. In a mixing bowl, add cucumber, pickled ginger and wakame.⁠
3. Place them in a small serving bowl and pour over the dressing just before serving.⁠
