Capsicum Nigiri

INGREDIENTS

1 red capsicum
1 yellow capsicum
2-3 tbs Spiral Organic Extra Virgin Olive Oil
1-2 tbs Spiral Organic Tamari
1-2 tbs Spiral Wasabi
1-2 tbs Spiral Sushi Vinegar
1 cup cooked sushi rice
2-3tbs Spiral Organic Furikake Aosa

Vegan/

METHOD

Preheat oven to 200C.

Place the capsicum in the oven on a lined baking tray. Roast in the oven until the skin has completely blistered and blackened. Remove from the oven and place the cooked capsicum in a bowl and cover with lid.

Once fully cooled, peel off the skin. Slice into sashimi sized pieces.

In a bowl, combine the tamari and wasabi. Add in the capsicum and gently toss.

To shape the rice, dampen your hands with water and shape the rice into ovals. Place the capsicum slices on top of the rice and press down. Sprinkle some of the furikake on top.
