Duck with Tamari & Balsamic Blueberry Sauce

INGREDIENTS

2 pieces of duck breast
Salt and pepper

Sauce
1 pack(125g) blueberry
2 Tbsp Spiral Organic Balsamic Vinegar
2 Tbsp Spiral Organic Tamari
1 Tbsp Spiral Organic Maple Syrup

Rocket and shredded carrot

METHOD

Score the duck skin with 2 cm apart. Lightly salt and pepper.

In a frying pan, sauté the duck skin side first with high heat for a few minutes until the skin becomes brown.

Remove the fat coming from the duck using a paper towel, turn it over, sauté the other side.

Turn down the heat, cook the skin side again until the skin becomes crispy and cook meat medium-rare. (depending on the thickness of the duck meat, cook about for 5-10 minutes).

Take it out and wrap with tin foil and cover with a bowl, sit still until the heat goes into the meat.

In the same frying pan remove extra fat but a little left (do not wash), add blueberry, balsamic vinegar, Tamari, maple syrup and heat it until juice comes from blueberry and mixed well with the other ingredients for about 5-7 minutes.

Place the duck on a plate and pour the sauce.

Serve with rocket and shredded carrot.
