Lentil Shiitake Mushroom Pate

INGREDIENTS

4-5 Spiral organic shiitake mushroom
4 tbs Spiral organic virgin coconut oil
1/2 sliced onion
2 cloves chopped garlic
1 cup mushroom
1 can Spiral organic lentils
1 tsp sea salt
Pinch black pepper
2 tbs fresh thyme
1 tsp all spice
1 tbs Spiral Organic Tamari
2 tbs Spiral organic brown rice vinegar

GLUTEN VEGAN/

METHOD

Soak shiitake mushrooms in warm water for 10minutes. Over a medium-high heat in a large pan, add 2tbs of coconut oil and heat. Add the onion, garlic, mushroom, shiitake mushrooms, lentils, sea salt, fresh thyme, all spice, tamari and the remaining 2 tbs coconut oil. Sauté and stir for approximately 3-5 minutes. Turn off the heat and add brown rice vinegar. In a food processor, scrape in the mixture and process until smooth.
Serve the pâté with crackers, good sourdough bread, or small toasts.
