Mushroom Bacon Spinach Tamari Spaghetti

INGREDIENTS
1 pack Casalare Gluten-Free Brown Rice Spaghetti
2C baby spinach, washed and drained
1Tbsp Spiral Organic Minced Garlic
2 pieces bacon, cut into strips
1 small onion, sliced very thinly
3-4 button mushrooms, sliced very thinly
4Tbsp Spiral Unsalted Roasted Cashew Nuts
½C Basil leaves (or Shiso leaves if available)
¼C Spiral Genuine Tamari
¼C Spiral Organic Extra Virgin Olive Oil
¼C Spiral Japanese Sesame Oil
1tsp black pepper
METHOD
1. In a mixing bowl, blend Tamari, olive oil, sesame oil and pepper well. Set aside.
2. Cook the spaghetti according to the package directions in al dente and drain. Save 2Tbsp pasta water.
3. While waiting for the pasta to cook, stir fry bacon in a frying pan. Add minced garlic and onion, cook through with the oil from bacon. Add mushrooms.
4. Add pasta and spinach and season with the blended Tamari, oil and pepper. add 1-2Tbsp pasta water if it’s too dry and toss well. Remove from heat.
5. Sprinkle cashew nuts and basil (or shiso leaves), toss gently. Serve warm and enjoy!
