Soba Noodles with Umami Sauce

Recipe By: Norie Mori

INGREDIENTS

½ pack Spiral Organic Soba Noodles
1 tbsp Spiral Minced Garlic (or 1-2 cloves of fresh garlic, minced)
1 tbsp Spiral Sunflower Oil
1 tbsp Spiral Japanese Toasted Sesame Oil
½ onion, thinly sliced
2 spring onions, sliced diagonally
1/3 large carrots, shredded
2-3 shiitake mushrooms or 4-5 button mushrooms, thinly sliced
100g of bean sprouts
30-40g of baby spinach
40-50ml Spiral Umami Black Garlic Sauce in Original
Spiral Organic Furikake (Aosa) to sprinkle

METHOD

Cook the soba noodles for about 3 minutes in boiling water, then drain, rinse with cold water and drain again.

Heat the sunflower oil and sesame oil in a large frying pan. Add in the minced garlic, onion, carrot, mushroom and stir through.

Add the cooked soba noodles and bean sprouts. Stir fry for a minute then pour the umami sauce evenly over the noodles. Toss the cooked noodles and vegetables and in add the spinach at the last minute (the steam will wilt the spinach perfectly)

Transfer to some plates and sprinkle with the Furikake.

Drizzle some of the umami sauce (if required).
