Amazake is a traditional Japanese fermented rice sweetener. It’s produced by short fermentation of rice to its optimum sweetness (without the use of sugar). It is a great source of vitamins, essential amino acids and glucose. It’s consumed as a drink diluted with hot water and ground ginger in Japan.
