Our Organic Kuzu powder is made from kuzu roots, its a superior quality cooking starch. Its popularity lies in the kuzu’s superior flavour, delicate texture and its ability to enhance the flavour of other ingredients. Our kuzu comes from Kagoshima prefecture on Kyushu Island where it has been grown for more than 100 years. Kagoshima is famous for kuzu production and is responsible for about 90% of Japanese kuzu production. When the roots are gathered, they are ground, washed and stemmed. Afterward they are repeatedly settled, skimmed, and washed with cold, clean water until the supernatant liquid becomes transparent. Finally the kuzu is dried for 1.5 months which creates a high quality, firm textured kuzu. The characteristics of our kuzu are high purification and clear white colour, which come from using the best quality kuzu roots and traditional manufacturing processes.
