Pickled Cucumber Bars⁠
- vegan/gluten-free - ⁠
⁠
INGREDIENTS⁠
---------------⁠
◘ 3-4 cucumbers⁠
◘ 1Tbsp Spiral Organic Umeboshi Puree⁠
◘ 1-2Tbs Spiral Mirin⁠
◘ 1Tbsp Spiral Japanese Sesame Oil⁠
◘ ½-1Tbsp salt⁠
◘ 3-4 chopsticks⁠
◘ pepper to taste⁠
⁠
METHOD⁠
------------⁠
1. On a chopping board, sprinkle salt onto cucumbers and rub well.⁠
2. Cut off the ends of the cucumbers.⁠
3. Insert a skewer or chopstick into the bottom of each cucumber and gently push all the way through to the top.⁠
4. Hold a sharp knife at an angle and slice the cucumber down to the skewer in the opposite direction while turning.⁠
5. Gently fan out each cucumber down the length of the skewer, until you have even gaps between slices. ⁠
6. In a small bowl, combine the umeboshi puree, mirin and sesame oil.⁠
7. Place the cucumbers and umeboshi mix in a freezer or Ziplock bag and squeeze out the air, sealing the bag tightly.⁠
8. Rub the cucumbers well into the mixture. Pickle for 2-3 hours in the fridge.⁠
9. Sprinkle with pepper and serve. Enjoy!⁠

Ingredients (2-3 servings)⁠
2 Lebanese cucumbers ⁠
½ pack (25g) Spiral Pickled Ginger thinly sliced, and squeezed⁠
¼ pack (25g) Spiral Organic Wakame, soaked in cold water for a few minutes, chopped and squeezed⁠
⁠
Dressing⁠
1Tbsp Spiral Japanese Sesame Oil⁠
½ Cup Spiral Organic Sushi Vinegar⁠
2-3Tbsp Spiral Organic Rice Syrup (or 1-2Tbsp Spiral Organic Maple Syrup)⁠

Method⁠
1. Cut the cucumbers lengthwise, remove seeds with a spoon and slice very thinly. ⁠
2. In a small bowl, mix the dressing ingredients. Set aside.⁠
2. In a mixing bowl, add cucumber, pickled ginger and wakame.⁠
3. Place them in a small serving bowl and pour over the dressing just before serving.⁠

◘ 1 can Spiral Organic Red Kidney Beans, drained⁠
◘ 1can Spiral Organic Chickpeas, drained⁠
◘ 1 avocado, ¼ sliced thinly and dice the rest⁠
◘ 1 Lebanese cucumber, diced⁠
◘ ½C baby tomato, halved or quartered⁠
◘ ¼ red onion, finely chopped⁠
◘ 1 stalk of celery, cut into 1cm cubes⁠
◘ ¼C corn kernels⁠
◘ ¼C chopped coriander⁠
⁠
Dressing⁠
◘ ½C Spiral Organic Extra Virgin Olive Oil⁠
◘ ½C Spiral Organic Apple Cider Vinegar⁠
◘ 1Tbsp Spiral Organic Maple Syrup⁠
◘ 2 tsp Spiral Organic Wholegrain Mustard⁠
◘ 1 tsp fresh minced garlic⁠

1. Mix all dressing ingredients in a jar or mixing bowl. Adjust to taste by adding salt, apple cider vinegar and black pepper. Set aside.⁠
2. Combine the rest of the ingredients in a salad bowl, drizzle with the dressing and toss well. ⁠
3. Serve with leafy greens (such as romaine lettuce), sliced avocado and lemon/lime.⁠
